  • 1/4 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice (freshly squeezed)
  • 1 garlic clove (minced)
  • 1 tsp honey or maple syrup
  • Water (as needed for sauce consistency)

Instructions

  1. Prep the vegetables: Wash and slice bell peppers, cucumbers, and carrots into matchsticks. Set aside fresh mint and cilantro.
  2. Soak the rice paper: Fill a large bowl with warm water. Dip each rice paper wrapper for about 10 seconds until pliable; lay flat on a clean surface.
  3. Add fillings: Place a small handful of vegetables, herbs, and protein near one edge of each wrapper; avoid overloading.
  4. Roll it up: Fold one edge over the fillings tightly, tuck in the sides, then roll to seal completely.
