  • 34 boneless, skinless chicken breasts
  • 1 can (7 oz) chipotle peppers in adobo sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup fresh or frozen sweet corn
  • 1 cup plain Greek yogurt
  • 2 tbsp fresh lime juice
  • ¼ cup chopped cilantro (optional)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chipotle peppers, adobo sauce, cumin, chili powder, salt, and pepper. Add chicken and coat well. Let it marinate for at least 30 minutes.
  2. Preheat a grill or skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  3. In a small bowl, mix Greek yogurt with lime juice and cilantro until smooth. Adjust seasoning as needed.
  4. In a saucepan over low heat, combine rinsed black beans and sweet corn until heated through.
  5. Start with rice or quinoa as the base; layer diced chicken, warm black beans, sweet corn, and drizzle generously with creamy sauce.
