  • 1 ripe mango, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed.
  2. While quinoa cooks, prepare the veggies: dice mango, bell pepper, and onion.
  3. In a large bowl, mix cooked quinoa with mango, black beans, bell pepper, onion, and cilantro.
  4. Drizzle lime juice and olive oil over the mixture. Season with salt and pepper; toss gently to combine.
