  • 3 tbsp lemon juice (freshly squeezed)
  • 5 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. Cook in a saucepan with 2 cups of water; bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
  2. While quinoa cooks, prep the vegetables: dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  3. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  4. Once quinoa is fluffy and slightly cooled, combine it in a large bowl with cucumbers, tomatoes, red onion, feta cheese, and parsley.
  5. Drizzle dressing over the salad ingredients and gently toss to combine. Let sit for 10 minutes before serving chilled or at room temperature.
