  • 3 lbs beef chuck roast
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • 1 cup BBQ sauce (store-bought or homemade)
  • 4 soft sandwich buns
  • 2 tsp cumin
  • 2 tsp smoked paprika

Instructions

  1. Chop the onion and mince the garlic.
  2. In a skillet over medium-high heat, heat oil and sear each side of the roast until browned (about 5 minutes per side).
  3. Place the roast in a slow cooker, sprinkle onions and garlic around it, then pour in beef broth until it covers half of the meat.
  4. Generously sprinkle cumin and smoked paprika over the roast.
  5. Cover and cook on low for 8 hours or high for 4 hours until fork-tender.
  6. Once cooked, shred the beef directly in the slow cooker, mixing with juices.
  7. Spoon generous portions onto buns, adding BBQ sauce or toppings as desired.
