  • 4 Salmon Fillets (6 oz each)
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Fresh Cilantro, chopped
  • 2 Garlic Cloves, minced
  • 1 Ripe Avocado
  • 2 tbsp Fresh Lime Juice
  • 3 tbsp Extra Virgin Olive Oil
  • 1/4 tsp Red Pepper Flakes
  • Salt & Pepper to taste

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, minced garlic, salt, pepper, and red pepper flakes in a bowl.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes.
  3. While marinating, prepare the chimichurri sauce by mashing the avocado in a bowl and mixing in parsley, cilantro, garlic, lime juice, olive oil, salt, and pepper until creamy yet chunky.
  4. Preheat your grill to medium-high heat (about 400°F).
  5. Grill the salmon skin-side down for 5-6 minutes on each side until it flakes easily with a fork.
  6. Serve each fillet topped generously with chimichurri sauce and lime wedges on the side.
