- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium sweet potatoes (about 1 lb), peeled and cubed
- 1 can (15 oz) black beans, rinsed
- 1 cup fresh cilantro
- Juice of 2 limes
- 2 tsp chipotle powder
- 2 tbsp olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
Instructions
- In a bowl, combine olive oil, chipotle powder, minced garlic, lime juice, salt, and pepper. Add chicken breasts and coat well; let marinate for at least 30 minutes.
- Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
- Place marinated chicken on another baking sheet alongside sweet potatoes. Roast for about 25-30 minutes until cooked through and golden brown.
- Blend cilantro with lime juice, olive oil, garlic, salt, and pepper until smooth; adjust seasoning as needed.
- Slice the chicken into strips and layer black beans at the bottom of bowls followed by roasted sweet potatoes and sliced chicken. Drizzle generously with cilantro lime sauce.
