  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh cilantro
  • Juice of 2 limes
  • 2 tsp chipotle powder
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, chipotle powder, minced garlic, lime juice, salt, and pepper. Add chicken breasts and coat well; let marinate for at least 30 minutes.
  2. Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  3. Place marinated chicken on another baking sheet alongside sweet potatoes. Roast for about 25-30 minutes until cooked through and golden brown.
  4. Blend cilantro with lime juice, olive oil, garlic, salt, and pepper until smooth; adjust seasoning as needed.
  5. Slice the chicken into strips and layer black beans at the bottom of bowls followed by roasted sweet potatoes and sliced chicken. Drizzle generously with cilantro lime sauce.
  6. Top with extra cilantro or avocado slices if desired. Serve warm for best flavor.
