  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup grated cheddar cheese
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13 baking dish with nonstick cooking spray.
  2. In a large bowl, mix uncooked rice, chicken broth, cream of mushroom soup, onion powder, garlic powder, paprika, and mixed vegetables until well combined.
  3. Cut the chicken into bite-sized pieces and fold them into the rice mixture until coated.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
