  • 1 lb ribeye steak, cut into bite-sized pieces
  • 8 oz penne pasta
  • 2 fresh jalapeños, diced (seeds removed for less heat)
  • 1 cup sharp cheddar cheese, grated
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add steak pieces seasoned with salt and pepper; cook until browned (5-7 minutes). Remove from skillet.
  2. In the same skillet, sauté onions and jalapeños for about 3-4 minutes until soft.
  3. Pour in chicken broth and bring to a gentle boil. Add penne pasta; cover and simmer until al dente (check package instructions).
  4. Return steak to the skillet once pasta is cooked. Stir in heavy cream and cheddar cheese until melted and creamy (2-3 minutes).
