  • 1 medium spaghetti squash
  • 1 lb ground turkey or beef (lean)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • 2 tbsp pine nuts, toasted (optional)
  • ¼ cup sliced black olives

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle olive oil on cut sides, sprinkle with salt, and place cut side down on a baking sheet.
  3. Roast in the oven for about 40 minutes or until tender when pierced with a fork.
  4. In a skillet over medium heat, heat olive oil and brown the ground turkey or beef. Stir occasionally.
  5. Add marinara sauce to the cooked meat and simmer for about 10 minutes.
  6. When squash is cool enough to handle, use a fork to scrape out strands into a bowl. Mix in the meat sauce until well combined.
  7. Transfer mixture to a baking dish, top with mozzarella and Parmesan cheese. Bake at 350°F (175°C) for another 15-20 minutes until cheese is bubbly and golden.
