- 28 oz canned whole peeled tomatoes
- 1 cup red wine
- 2 tbsp extra virgin olive oil
- 2 tsp dried oregano
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the beef until browned on all sides (5-7 minutes).
- Add onions and garlic; sauté until onions are translucent (3-5 minutes).
- Stir in canned tomatoes and red wine; mix well.
- Season with oregano, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for about 1 hour.
- Add orzo pasta and continue simmering until tender (15-20 minutes). Serve hot, garnished with fresh parsley.
