Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the asparagus, then halve the baby potatoes for even roasting.
  3. In a small saucepan, melt unsalted butter with minced garlic over low heat until fragrant.
  4. In a large bowl, combine asparagus and potatoes. Pour the garlic butter mixture over them, adding salt, pepper, and lemon zest; toss to coat well.
