  • 4 large carrots, chopped
  • 1.5 lbs Yukon Gold potatoes, quartered
  • 2 medium sweet onions, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh rosemary (or 1 tsp dried)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned (about 4-5 minutes per side).
  2. Layer chopped onions, carrots, and potatoes in the bottom of the slow cooker.
  3. In a bowl, mix beef broth with minced garlic, thyme, rosemary, salt, and pepper. Pour this mixture over the meat and vegetables.
  4. Cook on low for 8 hours or high for 4 hours until fork-tender.
  5. Shred or slice the roast before serving with the vegetables and broth.
