  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 9 no-boil lasagna noodles
  • 16 oz fresh mozzarella (sliced)
  • 1 cup fresh basil leaves
  • 28 oz crushed tomatoes (canned)
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add cubed chicken breasts; cook until golden brown and cooked through.
  3. Stir in crushed tomatoes with salt and pepper; simmer for about 10 minutes.
  4. In the greased baking dish, spread a layer of the tomato sauce, followed by lasagna noodles, the chicken mixture, slices of mozzarella, and basil leaves. Repeat layers until ingredients are used up.
  5. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
  6. Let it rest for 10-15 minutes before serving.
