- 2 cloves fresh garlic, minced
- 1-inch piece fresh ginger, minced
- 1 cup bell peppers, diced (mixed colors)
- 1 cup broccoli florets
- 1 cup carrots, thinly sliced
- 1/2 cup creamy peanut butter (natural)
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 2 tbsp fresh lime juice
- 1/4 tsp cayenne pepper (optional)
- 2 tbsp cooking oil (divided)
Instructions
- Chop chicken into bite-sized pieces. Set aside.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook for about 5-7 minutes until browned and cooked through. Remove from skillet.
- In the same skillet, add another tablespoon of oil and sauté bell peppers, broccoli, and carrots for about 4-5 minutes until tender-crisp.
- Whisk together peanut butter, soy sauce, honey/maple syrup, lime juice, minced garlic, ginger, and cayenne in a bowl until smooth.
- Return cooked chicken to the skillet with vegetables and pour the peanut sauce over everything. Stir well and cook for an additional 2-3 minutes until heated through.
