  • 1 lb boneless, skinless chicken breasts (about 3-4)
  • 2 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, minced
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 1/2 cup creamy peanut butter (natural)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 2 tbsp fresh lime juice
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp cooking oil (divided)

Instructions

  1. Chop chicken into bite-sized pieces. Set aside.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook for about 5-7 minutes until browned and cooked through. Remove from skillet.
  3. In the same skillet, add another tablespoon of oil and sauté bell peppers, broccoli, and carrots for about 4-5 minutes until tender-crisp.
  4. Whisk together peanut butter, soy sauce, honey/maple syrup, lime juice, minced garlic, ginger, and cayenne in a bowl until smooth.
  5. Return cooked chicken to the skillet with vegetables and pour the peanut sauce over everything. Stir well and cook for an additional 2-3 minutes until heated through.
  6. Enjoy immediately over rice or noodles, garnished with chopped peanuts and cilantro if desired.
