Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, ground cinnamon, and salt.
  3. Melt the butter in another bowl; let it cool slightly before mixing in milk and eggs. Stir in vanilla extract.
  4. Gently combine the wet and dry ingredients until just mixed; some lumps are fine.
  5. For the cinnamon filling, mix brown sugar with additional cinnamon in a small bowl.
  6. Fill each muffin cup halfway with batter, sprinkle a tablespoon of the cinnamon mixture on top, then add more batter to fill.
  7. Use a toothpick to create gentle swirls without over-mixing.
  8. Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
  9. Allow muffins to cool for 5 minutes before transferring them to a wire rack.
