  • 2 large sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 1 lb ground lamb or beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 2 cups whole milk
  • 1/4 tsp ground nutmeg
  • 3 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Heat olive oil in a skillet over medium heat. Sauté onions until translucent, then add minced garlic.
  3. 3. Stir in the ground meat, seasoning with salt, pepper, and cinnamon until browned. Add crushed tomatoes and simmer until thickened.
  4. 4. In another saucepan, melt butter and whisk in flour until bubbly. Gradually add milk while stirring until thickened. Stir in nutmeg and beaten eggs.
  5. 5. In a baking dish, layer half of the sweet potato slices, followed by half of the meat mixture and half of the béchamel sauce. Repeat layers finishing with béchamel on top.
  6. 6. Sprinkle grated Parmesan over the top layer. Bake uncovered for about 45-50 minutes until golden brown.
