  • 2 medium sweet potatoes, peeled and diced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 2 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté chopped onions in oil until translucent (about 5 minutes).
  2. Add garlic and ginger; sauté for another minute until fragrant.
  3. Stir in diced sweet potatoes, cumin, coriander, turmeric, salt, and pepper; coat well with spices.
  4. Pour in coconut milk and vegetable broth; bring to a gentle simmer.
  5. Cover pot and reduce heat to low; simmer for 20-25 minutes until sweet potatoes are tender.
  6. Stir in fresh greens until wilted; finish by squeezing lime juice over the curry.
