Instructions
- Peel the ripe plantains and slice them diagonally into thick pieces (approximately 1-inch wide).
- Heat vegetable oil in a skillet over medium-high heat until shimmering but not smoking (around 350°F).
- Carefully add the sliced plantains in batches and fry for about 3-4 minutes until golden brown on one side.
- Flip the plantains and fry for another 2-3 minutes until caramelized and tender.
- Remove from oil using tongs or a slotted spoon, placing them on paper towels to drain excess oil. Sprinkle with salt while still hot.
- Serve warm as a side dish or snack, optionally drizzling fresh lime juice over them.
