  • 2 lb boneless pork shoulder, cubed
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup pineapple chunks (canned or fresh)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar (or apple cider vinegar)
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Chop the pork into bite-sized cubes for even cooking.
  2. Sauté onions and garlic in a skillet over medium heat until fragrant.
  3. Add pork, sautéed onions, garlic, bell peppers, pineapple, soy sauce, brown sugar, ketchup, rice vinegar, and broth to the slow cooker.
  4. Cover and cook on low for 6-8 hours.
  5. About 30 minutes before serving, stir in cornstarch mixture to thicken the sauce.
  6. Serve over rice or noodles, garnished with sesame seeds or green onions if desired.
