  • 2 tablespoons extra virgin olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Carefully cut off both ends of the butternut squash. Slice it in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the flesh of each half and season with salt, pepper, and herbs if using. Rub seasonings in well.
  4. Place the seasoned halves cut-side down on a parchment-lined baking sheet.
  5. Roast for 25-30 minutes until tender and golden brown.
