Ingredients

  • 2 medium fresh beets (about 250g)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 1 garlic clove, minced
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast for about 45 minutes or until tender.
  2. While the beets roast, drain and rinse the chickpeas under cold water.
  3. Once the beets are cool enough to handle, peel and chop them. In a food processor, combine the chopped beets, chickpeas, tahini, lemon juice, minced garlic, salt, and pepper. Blend until well combined.
  4. With the processor running, gradually add olive oil until you achieve a smooth consistency. Adjust seasoning as needed.
  5. Serve in a bowl drizzled with additional olive oil and garnish with sesame seeds or herbs.
