- 2 medium fresh beets (about 250g)
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/4 cup tahini
- 2 tablespoons freshly squeezed lemon juice
- 1 garlic clove, minced
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast for about 45 minutes or until tender.
- While the beets roast, drain and rinse the chickpeas under cold water.
- Once the beets are cool enough to handle, peel and chop them. In a food processor, combine the chopped beets, chickpeas, tahini, lemon juice, minced garlic, salt, and pepper. Blend until well combined.
- With the processor running, gradually add olive oil until you achieve a smooth consistency. Adjust seasoning as needed.
- Serve in a bowl drizzled with additional olive oil and garnish with sesame seeds or herbs.
