  • 4 cups fresh rhubarb, chopped
  • 1 cup granulated sugar (adjust to taste)
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine chopped rhubarb and granulated sugar. Let sit for 10 minutes until juicy.
  3. In another bowl, mix brown sugar, flour, oats, cinnamon, and salt. Cut in cold butter until crumbly.
  4. Spread the rhubarb mixture in a greased baking dish and top with the crumb mixture.
  5. Bake for 35-40 minutes until bubbly and golden on top.
  6. Allow to cool slightly before serving with vanilla ice cream.
