  • 4 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and a pinch of salt.
  3. In another bowl, mix vegetable oil and sugar until blended; add eggs one at a time followed by buttermilk and vanilla.
  4. Stir in red food coloring until fully incorporated.
  5. Gradually add dry ingredients to wet mixture, folding gently until just combined.
  6. Fill liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean. Cool on a wire rack.
  7. For the frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar until desired sweetness is achieved.
