Description

Ingredients

  • 12 oz rigatoni pasta
  • 1 cup jarred roasted red peppers
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Blend roasted red peppers and heavy cream in a food processor until smooth.
  4. Pour the pepper cream into the pan with garlic on low heat, slowly adding Parmesan cheese while stirring until melted.
  5. Add cooked rigatoni to the sauce, tossing gently to coat evenly. Season with salt, pepper, and herbs to taste.
  6. Serve hot, garnished with additional Parmesan or fresh basil if desired.
