- 12 oz rigatoni pasta
- 1 cup jarred roasted red peppers
- 3 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook rigatoni in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
- In a pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Blend roasted red peppers and heavy cream in a food processor until smooth.
- Pour the pepper cream into the pan with garlic on low heat, slowly adding Parmesan cheese while stirring until melted.
- Add cooked rigatoni to the sauce, tossing gently to coat evenly. Season with salt, pepper, and herbs to taste.
- Serve hot, garnished with additional Parmesan or fresh basil if desired.
