  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder
  • 1 tsp ground cinnamon

  • 4 oz cream cheese (softened)
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Spoon half of the batter into each muffin cup, add a dollop of cream cheese filling, then top with remaining batter.
  6. Bake for 20–25 minutes or until a toothpick comes out clean.
