  • 34 lbs chuck roast
  • 2 medium sweet onions, sliced
  • 46 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup BBQ sauce (store-bought or homemade)
  • 6 soft burger buns (or brioche)
  • 2 tsp paprika
  • 1 tsp cumin
  • Coleslaw for topping (optional)

Instructions

  1. Season the chuck roast with salt and pepper. Sear it in a hot skillet until browned on all sides.
  2. Sauté sliced onions and minced garlic in the same skillet until fragrant and translucent.
  3. Place the seared beef into the slow cooker along with sautéed onions, garlic, beef broth, BBQ sauce, and spices.
  4. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender enough to shred.
  5. Shred the beef using two forks in the slow cooker and mix it back into the juices.
  6. Assemble your sandwiches by loading buns with pulled beef and top with coleslaw if desired.
