  • 4 mini pumpkins (about 4 inches in diameter)
  • 1 lb lean ground beef or turkey
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off each mini pumpkin and scoop out the seeds.
  3. In a skillet over medium heat, brown the ground meat. Drain excess fat, then stir in pizza sauce and Italian seasoning.
  4. Fill each pumpkin with the meat mixture, leaving some space for cheese.
  5. Generously sprinkle shredded mozzarella on top of each stuffed pumpkin.
  6. Place pumpkins in a baking dish, drizzle with olive oil, and bake for 30-35 minutes until tender and bubbly.
