  • 1 medium green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 1 cup mushrooms (button or portobello), sliced
  • 4 oz provolone cheese, sliced
  • 2 cups cooked rice or quinoa
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Slice the steak, chop the vegetables, and have everything ready.
  2. Cook the steak: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add steak strips seasoned with salt and pepper; cook for 3-4 minutes until browned. Remove from skillet.
  3. Sauté the veggies: In the same skillet, add another tablespoon of olive oil if needed. Sauté onions and peppers for about 5-7 minutes until softened.
  4. Combine: Add mushrooms to the skillet, cooking for an additional 3-4 minutes before returning the steak to combine all ingredients.
  5. Melt the cheese: Lower the heat and place provolone slices on top; cover until melted (about 2-3 minutes).
  6. Serve: Spoon the cheesy mixture over rice or quinoa in bowls and garnish as desired.
