  • 2 medium eggplants (about 500g)
  • 3 tbsp white or yellow miso paste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 2 tsp sesame oil (plus extra for drizzling)
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 green onions, sliced (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the eggplants lengthwise and sprinkle with salt; let sit for 15 minutes to draw out moisture.
  3. In a bowl, whisk together miso paste, soy sauce, honey (or maple syrup), garlic, and ginger.
  4. Rinse excess salt from the eggplants and pat dry. Brush them generously with the miso glaze mixture before placing cut side down on the baking sheet.
  5. Bake for 25-30 minutes until tender and caramelized.
  6. Drizzle with sesame oil and top with green onions and toasted sesame seeds before serving.
