- 2 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup
- 2 tsp sesame oil (plus extra for drizzling)

- 1 inch fresh ginger, minced
- 2 green onions, sliced (for garnish)
- 1 tbsp toasted sesame seeds (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the eggplants lengthwise and sprinkle with salt; let sit for 15 minutes to draw out moisture.
- In a bowl, whisk together miso paste, soy sauce, honey (or maple syrup), garlic, and ginger.
- Rinse excess salt from the eggplants and pat dry. Brush them generously with the miso glaze mixture before placing cut side down on the baking sheet.
