  • 4 salmon fillets (about 6 oz each)
  • 3 tbsp white miso paste
  • 4 tbsp unsalted butter, softened
  • 4 scallions, chopped
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste and softened butter until smooth. Set aside some for later.
  3. Place the salmon fillets on the prepared baking sheet and spread the miso butter mixture generously over each fillet.
  4. Bake the salmon for 12-15 minutes or until it flakes easily with a fork.
  5. While the salmon bakes, heat olive oil in a skillet over medium heat. Add chopped scallions and sauté for about 2-3 minutes until tender.
  6. Remove from heat and stir in chopped parsley, lemon juice, salt, and pepper to create the salsa verde.
  7. Serve the baked salmon topped with the scallion salsa verde.
