  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil (for frying)
  • Powdered sugar for dusting

Instructions

  1. In a medium saucepan over medium heat, combine 1/4 cup water, 1/4 cup butter, and 1/4 cup sugar until boiling. Stir in 1 cup of flour and mix until a ball of dough forms.
  2. Remove from heat and let cool slightly. Mix in 1 cup pumpkin puree and 2 eggs until smooth.
  3. Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
  4. Transfer dough into a piping bag fitted with a star tip; pipe 4-inch strips into hot oil, cutting with scissors as you go.
  5. Fry churros for about 2-3 minutes on each side until golden brown. Drain on paper towels and roll in powdered sugar.
