- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 2 cups fresh spinach
- ½ cup freshly grated Parmesan cheese
- ¼ tsp red pepper flakes
- Salt & pepper to taste
Instructions
- 1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes. Drain and set aside.
- 2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 30 seconds until fragrant, then add halved cherry tomatoes and cook until softened.
- 3. Pour in heavy cream and stir in fresh spinach until just wilted.
- 4. Add the cooked gnocchi to the skillet and gently toss until coated in the sauce. Season with salt, pepper, and red pepper flakes.
- 5. Serve warm, topped with freshly grated Parmesan cheese.
