  • 1/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 2 lemons
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C). In a bowl, mix flour and granulated sugar. Cut in cold butter until crumbly.
  2. Gradually add ice-cold water until the dough forms. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Transfer to a pie pan and trim excess.
  4. Prick the crust with a fork; bake for 15 minutes until lightly golden. Cool while preparing the filling.
  5. In another bowl, whisk eggs and granulated sugar until combined. Add lemon juice, zest, and heavy cream; mix until smooth.
  6. Pour filling into cooled crust; bake for 25-30 minutes until set but slightly jiggly in the center. Cool completely before slicing.
