- 1/4 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 375°F (190°C). In a bowl, mix flour and granulated sugar. Cut in cold butter until crumbly.
- Gradually add ice-cold water until the dough forms. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface to about 1/8 inch thick. Transfer to a pie pan and trim excess.
- Prick the crust with a fork; bake for 15 minutes until lightly golden. Cool while preparing the filling.
- In another bowl, whisk eggs and granulated sugar until combined. Add lemon juice, zest, and heavy cream; mix until smooth.
- Pour filling into cooled crust; bake for 25-30 minutes until set but slightly jiggly in the center. Cool completely before slicing.
