  • 1/2 cup plain breadcrumbs (or panko)
  • 1/4 cup green onions (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp Sriracha sauce (adjust to taste)
  • 1/2 cup mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 tsp sesame oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, green onions, garlic, ginger, soy sauce, brown sugar, and Sriracha. Mix until well combined.
  3. Form the mixture into small meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until browned and cooked through (internal temperature should be at least 160°F or 70°C).
  5. While the meatballs bake, mix mayonnaise with lemon juice and Sriracha in a small bowl until well combined.
  6. Serve warm with the spicy mayo dip.
