Ingredients
- 4 large bell peppers (red or green)
- 1 lb lean ground beef
- 1 medium sweet onion, diced

- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Halve the bell peppers lengthwise and remove seeds. Place cut side up in a baking dish.
- In a skillet over medium heat, add olive oil. Sauté onions and mushrooms until soft (5-7 minutes).
- Add ground beef to the skillet, cooking until browned. Stir in garlic powder, salt, and pepper.
- Stuff each pepper half with the beef mixture and top with provolone cheese.
- Cover with aluminum foil and bake for 25 minutes; uncover for the last 10 minutes to melt the cheese.
