  • 4 large bell peppers (red or green)
  • 1 lb lean ground beef
  • 1 medium sweet onion, diced
  • 1 cup fresh mushrooms, sliced
  • 1 cup provolone cheese, sliced or shredded
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Halve the bell peppers lengthwise and remove seeds. Place cut side up in a baking dish.
  2. In a skillet over medium heat, add olive oil. Sauté onions and mushrooms until soft (5-7 minutes).
  3. Add ground beef to the skillet, cooking until browned. Stir in garlic powder, salt, and pepper.
  4. Stuff each pepper half with the beef mixture and top with provolone cheese.
  5. Cover with aluminum foil and bake for 25 minutes; uncover for the last 10 minutes to melt the cheese.
