  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh basil leaves
  • 2 ripe heirloom tomatoes
  • 8 oz burrata cheese
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. Pound chicken between plastic wrap until about half an inch thick.
  3. Heat olive oil in a skillet over medium heat; sear chicken for 5-7 minutes per side until golden brown.
  4. While chicken cooks, dice tomatoes and chop basil; mix in a bowl with salt and pepper.
  5. Once cooked, plate chicken and top with burrata cheese and tomato-basil mixture.
  6. Drizzle with olive oil or balsamic vinegar if desired; serve warm.
