Instructions
- Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper and arrange the hatch chiles in a single layer. Roast for 20-25 minutes until blistered and charred.
- In a large skillet over medium heat, add olive oil and the chopped onion. Sauté for about 5 minutes until translucent.
- Stir in minced garlic, cumin, and smoked paprika; cook for an additional 1-2 minutes until fragrant.
- Peel the charred skins from the roasted chiles and chop coarsely. Add them to the skillet along with vegetable broth.
