  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium sweet onion, finely chopped
  • 2 cloves fresh garlic, minced
  • 1 ripe avocado, sliced
  • Juice of 2 limes
  • 2 tbsp olive oil (plus more for sautéing)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill chicken for about 6–7 minutes on each side until cooked through.
  3. While the chicken cooks, heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened.
  4. Cook rice according to package instructions; stir in black beans during the last few minutes to warm through.
  5. Assemble bowls with a base of rice and beans topped with sliced grilled chicken and sautéed vegetables. Add avocado slices and garnish with fresh cilantro.
