Ingredients

Scale
  • 2 slices sourdough or ciabatta bread
  • 100g fresh burrata cheese

  • 2 large eggs
  • 1 tbsp extra-virgin olive oil (plus more for drizzling)
  • Fresh herbs (basil or arugula) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the bread thickly and place on a baking sheet. Drizzle with olive oil and bake for about 10 minutes until golden brown.
  2. In a nonstick skillet over medium heat, add olive oil and fry the eggs for 3-4 minutes until the whites are set but yolks remain runny.
  3. In another skillet, crisp the prosciutto over medium heat for 2-3 minutes until crunchy.
  4. Assemble by layering burrata cheese on toasted bread, topping with prosciutto, and placing the fried egg on top.
