  • 2 (6 oz) white fish fillets (cod or sole)
  • 1/3 cup sliced almonds
  • 4 tbsp unsalted butter
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Thaw fish if frozen, and slice almonds.
  2. Toast the almonds: In a dry skillet over medium heat, toast the sliced almonds until golden brown (3-5 minutes). Remove and set aside.
  3. Sear the fish: In another skillet, melt butter over medium-high heat. Season fish with salt and pepper, then add to the skillet. Cook until golden on one side (4-5 minutes).
  4. Add garlic and lemon juice: Flip the fish carefully; add minced garlic and cook until fragrant (about 1 minute). Squeeze lemon juice over the fish.
  5. Create the brown butter sauce: Continue cooking for another 3-4 minutes while swirling the pan to brown the butter further.
  6. Serve: Plate the fish fillets, drizzle with brown butter sauce, top with toasted almonds and parsley.
