  • 3 lbs Russet potatoes, peeled and sliced into 1/8-inch rounds
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 1 large sweet onion, thinly sliced
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt butter and sauté the onions until soft and translucent (about 5 minutes).
  3. In a large bowl, whisk together heavy cream, salt, pepper, and half of the cheddar cheese.
  4. In a greased baking dish, layer the potato slices followed by sautéed onions and pour some cheese sauce over each layer until all ingredients are used.
  5. Cover with foil and bake for 45 minutes; remove foil and sprinkle remaining cheese on top. Bake for an additional 15 minutes or until bubbly.
