- 3 lbs Russet potatoes, peeled and sliced into 1/8-inch rounds
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded (divided)
- 1 large sweet onion, thinly sliced
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, melt butter and sauté the onions until soft and translucent (about 5 minutes).
- In a large bowl, whisk together heavy cream, salt, pepper, and half of the cheddar cheese.
- In a greased baking dish, layer the potato slices followed by sautéed onions and pour some cheese sauce over each layer until all ingredients are used.
- Cover with foil and bake for 45 minutes; remove foil and sprinkle remaining cheese on top. Bake for an additional 15 minutes or until bubbly.
