  • ½ cup brown sugar

  • 2 large eggs
  • 1 ½ cups shredded carrots (freshly grated)
  • ½ cup chopped walnuts (optional)
  • 8 oz cream cheese
  • ½ cup butter
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the vegetable oil and eggs until frothy. Combine this mixture with the dry ingredients gently to avoid overmixing.
  4. Fold in the shredded carrots and walnuts (if using) until just combined.
  5. Spoon the batter into each cupcake liner, filling them about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
