- 1 cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Trim excess fat from chicken breasts and place them in the crockpot.
- Sprinkle minced garlic over the chicken, then add diced tomatoes and chicken broth; stir to combine.
- Add Italian seasoning, salt, and pepper; mix well.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken shreds easily.
- About 30 minutes before serving, stir in heavy cream and half of the grated Parmesan cheese.
- Just before serving, top with fresh basil leaves and remaining Parmesan cheese.
