Description

This creamy copycat cauliflower puree is a deliciously rich alternative to mashed potatoes, perfect for any meal. With a silky texture and depth of flavor from fresh garlic and butter, it’s a comforting side dish that will impress your guests or be a simple indulgence on a cozy night in.

Ingredients

Scale
  • 1 head cauliflower, cut into florets
  • 2 tbsp unsalted butter (or olive oil for vegan option)
  • 1/2 cup heavy cream (or coconut milk for vegan option)
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Remove the leaves from the cauliflower and cut it into even-sized florets.
  2. Boil salted water in a large pot, add the cauliflower, and cook until fork-tender (about 10-12 minutes).
  3. In a skillet, melt butter over medium heat and sauté minced garlic until fragrant (1-2 minutes).
  4. Drain the cauliflower and transfer it to a blender or food processor. Add sautéed garlic, remaining butter or oil, and cream. Blend until smooth.
  5. Season with salt and pepper to taste; blend briefly to mix.
  6. Serve warm, garnished with herbs or a drizzle of olive oil if desired.
