  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 tbsp Dijon mustard
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup milk or cream (for potatoes)

Instructions

  1. Season chicken breasts with salt and pepper. Heat oil in a skillet over medium heat.
  2. Sear the chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant. Stir in Dijon mustard and chicken broth, scraping up browned bits.
  4. Add heavy cream to the sauce; return chicken to the skillet, spooning sauce over it. Simmer for 5 minutes.
  5. Boil potato chunks in salted water until fork-tender. Drain, then mash with butter and milk until smooth.
  6. Serve the chicken over mashed potatoes with extra sauce drizzled on top.
