  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 2 cups diced Granny Smith apples
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 tsp cinnamon
  • ½ cup chopped nuts (pecans or walnuts) – Optional

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a springform pan.
  2. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fluffy. Stir in sour cream until combined.
  3. Add eggs one at a time, mixing well after each addition. Sprinkle in cinnamon and blend until incorporated.
  4. Gently fold in diced apples. Pour the filling over the crust and bake for 55-60 minutes until set but slightly jiggly in the center.
  5. Cool completely before drizzling caramel sauce on top. Chill in the fridge for at least four hours before serving.
