  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 cups tart apples, diced (Granny Smith recommended)
  • 1 tsp cinnamon
  • 1 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the prepared pan.
  3. Beat cream cheese in a separate bowl until smooth; gradually add sugar. Mix in eggs one at a time until fluffy.
  4. Fold in diced apples and cinnamon into the cheesecake mixture.
  5. Pour the filling over the crust and bake for 30-35 minutes or until slightly jiggly in the center.
  6. Allow to cool completely; drizzle with caramel sauce before chilling in the fridge for at least two hours before slicing.
