- 2–3 lbs Beef Chuck Roast
- 4 Dried Guajillo Chiles
- 2 Dried Pasilla Chiles
- 1 large Yellow Onion
- 4–6 Garlic Cloves
- 4 cups Low-Sodium Beef Broth
- 8 oz Fresh or Dried Ramen Noodles
- Fresh Cilantro (for garnish)
- Lime Wedges (for serving)
- 1 cup Oaxaca Cheese (or Mozzarella)
Instructions
- Prepare the chiles by removing stems and seeds; toast in a dry skillet until fragrant.
- In a blender, combine toasted chiles, onion, garlic, and beef broth; blend until smooth.
- Sear the beef chuck roast in a large pot over medium-high heat until browned on all sides.
- Add the blended sauce and remaining beef broth to the pot; bring to a simmer and cover. Cook for 2-3 hours until tender.
- Cook ramen noodles according to package instructions; drain and set aside.
