  • 23 lbs Beef Chuck Roast
  • 4 Dried Guajillo Chiles
  • 2 Dried Pasilla Chiles
  • 1 large Yellow Onion
  • 46 Garlic Cloves
  • 4 cups Low-Sodium Beef Broth
  • 8 oz Fresh or Dried Ramen Noodles
  • Fresh Cilantro (for garnish)
  • Lime Wedges (for serving)
  • 1 cup Oaxaca Cheese (or Mozzarella)

Instructions

  1. Prepare the chiles by removing stems and seeds; toast in a dry skillet until fragrant.
  2. In a blender, combine toasted chiles, onion, garlic, and beef broth; blend until smooth.
  3. Sear the beef chuck roast in a large pot over medium-high heat until browned on all sides.
  4. Add the blended sauce and remaining beef broth to the pot; bring to a simmer and cover. Cook for 2-3 hours until tender.
  5. Cook ramen noodles according to package instructions; drain and set aside.
  6. Shred the beef and assemble bowls with noodles, broth, shredded meat, cilantro, and cheese. Serve hot with lime wedges.
