Ingredients
- 1 cup dried green lentils
- 1 cup whole wheat breadcrumbs
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- ½ cup crumbled feta cheese
- 2 large eggs
- 2 tsp dried oregano
- Salt and pepper to taste
- Tzatziki sauce for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the lentils under cold water. In a pot, combine lentils with 3 cups of water, bring to a boil, then simmer for 20-25 minutes until tender.
- Sauté the chopped onion in olive oil over medium heat until translucent. Add minced garlic and cook until golden.
- In a bowl, mix the cooked lentils, sautéed onion and garlic, breadcrumbs, feta cheese, eggs, oregano, salt, and pepper until combined.
- Form mixture into small balls (about 2 tablespoons each) and place on a parchment-lined baking sheet.
- Bake for 25-30 minutes until golden brown.
